Wilding Malus Pommeau

We are delighted to release our first batch of Pomona, which we are calling Malus (there will be a Pyrus to come in 2024). This is a blend of three Pomona casks, using spirit from 2019 and 2020 with juice from 2020 and 2021. We have used a blend of bittersweet and sharp fruit for the juice component aiming to have plenty of tannins to handle the long aging. This is great to drink after dinner either by itself or with nuts, dried fruit and very aged cheeses. You could also serve as an aperitif with one large, very cold, ice cube and just the tiniest splash of soda. This is one of the nicest things we’ve made to date, and it is just perfect for the colder months.
