As the trees in Beccy & Sam's home orchard are maturing, the bittersharp varieties that were top worked in are producing abundant special fruit. Porter's Perfection is a lovely apple, a favourite of theirs and when blended with 40% Dabinett the flavours are wonderfully multi-layered.
 
This has been fermented to dry, bottled before the end to create a sparkling dry Pet Nat. Red apple, orange flesh, peach, orchard floor. Fresh acidity, lovely soft rounded tannins and bright sparkle which lifts the whole thing in the mouth.
