This is a part of the Eclosion series, celebrating single varieties and experimentations through fementation. When a wild fermented Braeburn SV took on wonderful spicy esters, reminiscent of a Belgian saison, it was aged on the lees for a further three months, before blending with a vinous, lightly acidic cider. Expect delicate spicy and floral esters, reminiscent of a Belgian blonde ale, with a vinous dry finish.
