TASTING NOTES

Candied lemon, honey, thyme flowers, creamy pears and citrus fruit. Visually reminiscent of northern Italian white wines, this perry is pale, crystalline clear, green tinged, and its pretty aromas of sweet meadow flowers, incense perfume and freshly cut pear only serve to confirm the wine comparison. Simply one of the greatest drinks ever made...anywhere. Ever.

Caledonian Cider Co Dearcan Dorcha

Black Isle, Scotland

ABV 7%| 750ml | VEGAN | GLUTEN FREE

Dearcan Dorcha (Gaelic for dark berries) is a straight dry cider fermented with a load of blackcurrants grown by cider maker Ryan's mum in her garden up in Brora. We love seeing the pink foam float on the dark purple cider. A fully natural version strongbow dark fruits I suppose, great fun!

TASTING NOTES

A tart, mouth puckering flavour of brambles hits instantly but is followed by a mellowing of the wersh flavours and a soft, jammy sensation fills the mouth as you're reminded of how most dark berry ciders don't actually taste like dark berries

Food - Black pepper aubergine curry

Music - Prince - Purple Rain

This is a classic French farmhouse cider made by a collective of growers in the Brittany region. Rustic, earthy and made to be shared with friends around a table or a warm baguette.

Caledonian Dearcan Dorcha

Scotland

ABV 7%| 750 ML | VEGAN | GLUTEN FREE

Natural cider made from fresh pressed apple juice and Highland grown blackcurrants from Brora. The apple juice and berries are fermented wild together and bottled early to give this Scottish dark fruit cider a high fizz. Not quite the same as the dark fruits you might be used to in most establishments, this is for fruit purists and drinkers who like something a bit playful.

TASTING NOTES

Sharp and bright acidity with lip smacking brightness from the blackcurrants. Creamy on the finish with lingering notes of blackcurrant crumble and bramble jam.

Unfiltered, unpasteurised and with no added sweeteners or sulphites, gluten free and suitable for vegans.

Welsh Mountain Cider Ping Pong Pét-Nat

Monmouthshire, Wales

ABV 6.9%| 750 ML | VEGAN | GLUTEN FREE

A light, naturally sparkling cider made from 100% fresh pressed Cox’s Orange Pippin apples.

All Welsh Mountain ciders used to be aged in a barn under a Ping Pong room, so this bouncy title seemed appropriate. Ping Pong Pet Nat is a single variety Cox's Orange Pippin cider, bottled Pet Nat. It is aged on the lees for fuller flavour, so either pour carefully for a clear cider, or shake to wake.

TASTING NOTES

Green apple, basil and battenburg on the nose this is a zingy and playful wee cider with loads of character and zippy acidity. Lemon oil and lychee in the mouth create a moreish cider that will appeal to everyone.

Unfiltered, unpasteurised and with no added sweeteners or sulphites, gluten free and suitable for vegans.

Box of 6

This involves bottling before the end of primary fermentation, allowing the process to complete in the bottle itself.

TASTING NOTES

Box of 3

Olivers Cheddar On My Mind

                                                          Herefordshire

ABV 6.8%| 750ML | VEGAN | GLUTEN FREE

A collaboration between Tom Oliver and Cellarman Sam to celebrate
the world of farmhouse food as well as cider. Blended to be paired
with a quality artisan cheddar,. This is a classic blend of bittersweet
and bittersharp cider apples, a touch of barrel smoke to compliment
the umami and saltiness of a good, crumbly cheddar!

TASTING NOTES

Dry, lightly sparkling cider with gorgeous soft tannins and hints of barrel smoke on the finish to compliment that wedge of cheddar you're trying not to finish before you go to bed.

Unfiltered, unpasteurised and with no added sweeteners or sulphites, gluten free and suitable for vegans.

Newton Court Black Mountain Perry

                                                          Herefordshire

ABV 4.5%| 750ML | VEGAN | GLUTEN FREE

Black Mountain Perry is a keeved perry. The Black Mountains overlook Herefordshire, with its red soil, Hereford cattle and sprawling orchards where perry pear trees bear their forgotten fruit.  Unlike cider, perry does not contain as much tannin but is more astringent in taste. Using the Normandy method, this perry was bottled before its fermentation has finished, capturing the natural fruit sugars, allowing secondary fermentation to occur, thus resulting in a naturally sparkling keeved perry.

TASTING NOTES

Naturally sweet perry with notes of melon and lychee on the nose and a beautiful hit of candied pear drops on the tongue, finishing with a touch of slate and minerality. Elegant, sophisticated and way classier than any of us.

Unfiltered, unpasteurised and with no added sweeteners or sulphites, gluten free and suitable for vegans.

Cairn O'Mhor Wild Ferment Cox & King Jim

                                                       Perthshire, Scotland

ABV 6.7%| 750ML | VEGAN | GLUTEN FREE

This is the debut wild yeast fermentation coming out of Cairn O 'Mhor cidery and they have not left us disappointed! The Cox apples were milled and left overnight to develop flavour before pressing. This gives a more intense richness and texture to the cider. This juice was then wild fermented and blended with the tannic King Jim giving a beautifully balanced cider not a million miles form an orange wine in flavour.

TASTING NOTES

Apricots and orange bitters on the nose and the first encounter on your tongue is a pure thirst-quenching burst of juiciness from the Cox. Then comes the texture from the King Jim and a stinging minerality that lures you in for another scoop. Drink this one just below room temperature and all in one go to really capture the freshness.

Unfiltered, unpasteurised and with no added sweeteners or sulphites, gluten free and suitable for vegans.

Box of 6

Gregg's Pit Blakeney Red, Brandy & Winnals Longdon 2021

                                                       Herefordshire

ABV 5.5%| 750ML | VEGAN | GLUTEN FREE

A wonderful trio of pears, this was launched at last years Cider Salon
to universal acclaim. Another keeved and naturally sparkling cider from Herefordshire made using a traditional stone press in Ledbury, Herefordshire.

TASTING NOTES

Dry, tempered by a touch of natural sorbitol that
perry pears are so famous for, with light, chalky tannins and a touch
of oak.

Unfiltered, unpasteurised and with no added sweeteners or sulphites, gluten free and suitable for vegans.

Little Pomona When Burum Met Pomona

                                                       Herefordshire

ABV 7.4%| 750ML | VEGAN | GLUTEN FREE

Burum Collective is an online publication, platform, and collaborative organisation about encouraging a safer, healthier and more equitable working environment for those within the drinks and hospitality industry.

When Burum Met Pomona 2021, a still cider, is the first of a pair. Gorgeous hand-picked Dabinett apples from Brook House Farm were wild fermented and then matured in ex-Chardonnay barrels for six months before bottling.

TASTING NOTES

This wonderful collaboration by two of our favourite folks is a super juicy, “peach juice and tangy orange dripping from your chin” type of cider. If you trapped it in coloured gelatine pastilles, this would be the world’s tastiest wine gums! But that would be pretty laborious and probably impossible.

Unfiltered, unpasteurised and with no added sweeteners or sulphites, gluten free and suitable for vegans.

Ross On Wye Bastet

                                                       Herefordshire

ABV 7.6%| 750ML | VEGAN | GLUTEN FREE

Cider is meant to be shared with friends, and so here's another collaboration for you! Nicky Kong, founder of the Manchester Cider Club and The Cat in the Glass bottle shop, went with dear friends Cath & Dick down to Broome Farm to blend a cider for sharing with your mates. Five apples – Dabinett, Michelin, Reinette d’Obry, Sweet Coppin & Somerset Redstreak – bring their unique characters to a delicately balanced cider.

TASTING NOTES

This one is absoilutely oozing with flavour and complexity. Signature robust tannins from Ross On Wye and that superfunk on the nose that we've all come to expect (and love?) from them. Bottle conditioned for a delightful spritz and texture this is a cider drinker's cider for all you cider drinkers.

Unfiltered, unpasteurised and with no added sweeteners or sulphites, gluten free and suitable for vegans.

June 2023:

Box of 3

Thornborough Champagne Method Cider

                                                          Yorkshire

ABV 6.5%| 750ML | VEGAN | GLUTEN FREE

Perfectly fermented, dry champagne-method cider with a beautifully fresh apple aroma made on the edge of the Yorkshire Dales with 100% fresh juice from locally-grown desert and cider apples.

Pressed in small batches on a traditional rack-and-cloth cider press and matured for at least 12 months in stainless steel vats before bottle-conditioning. Each bottle then goes through the traditional process of riddling and disgorging by hand to remove the sediment, before adding a dosage made from pure Dabinett cider apples.

TASTING NOTES

The result is a modern dry sparkling cider that makes a perfect alternative to Prosecco or Champagne - try it as an aperitif or paired with food.

Unfiltered, unpasteurised and with no added sweeteners or sulphites, gluten free and suitable for vegans.

Kentish Pip

Chisel Jersey Still Cider

Somerset

 ABV 5.5%| 750ML | VEGAN | GLUTEN FREE

Chisel Jersey is an old Somerset apple variety we grow at Woolton Farm. It is late ripening, with high levels of astringent tannin and a wonderfully pure cider apple note. This still cider is dry, unadulterated, mouth-puckering goodness.

TASTING NOTES

It is best drunk with food, we recommend a classic cider pairing: mature Somerset Cheddar, roast pork and apple chutney. Consume at room temperature.

Somerset

ABV. 5.5% | 750ML | VEGAN | GLUTEN FREE

A blend of Yarlington Mill and Stoke Red this cider was initially bottled before the initial fermentation finished (pét-nât) to give it a light sparkle but it had other plans and decided not to continue fermenting. As a result we have a slightly sweet, cloudy cider.

TASTING NOTES

TASTING NOTES

Creamy, juicy and incredibly smooth. Soft prickly pear and hints of boiled car sweets from a tin that's been in the glove box since 1978 but still taste amazing.

Pair with:

Trabanco

Sidra Natural

Asturias, Spain

ABV. 6% | 750ML | VEGAN | GLUTEN FREE

This is a traditional Spanish sidra from the world renowned Asturias region. Trabanco is one of the best known sidrerias there and like all makers they follow strict guidelines on how they make their cider right down to final levels of acidity present in the final drink.

TASTING NOTES

Still, high acid cider with notes of pineapple on the nose and zingy lemon, citrus on the palate. Classic Spanish sidra. Pour from a height in to the glass to give a little carbonation to the cider. Have a mop handy for that!

Pair with:

Sweet paprika sausage casserole

February 2023:

Box of 3

Chapel Sider: ‘Franko’

Herefordshire

ABV. 7.8% | 750ML | VEGAN | GLUTEN FREE

Blend:100% Dabinett fermented and aged in an ex-red wine barrel. The result is well-rounded, mature and complex. A little like Francis Cook who you see on the front label affectionately known as ‘Franko’.

TASTING NOTES

Juicy and dry, ripe red apples and orange squash. This is typical Dabinett with all it’s orange flesh, vanilla and spice coupled with the influence of the red wine barrel which has elevated all the elements as well as added some extra red fruit bitter tannins. A little flourish of acidity is quickly expelled by a long dry finish with a chalky texture.

Fleming's Cider: Le Mariage 2021

Fife

ABV. 7.5% | 750ML | VEGAN | GLUTEN FREE

Blend: It was made by taking the best of two Fife apple pressings that year and blending them at bottling with four separate fermentation vessels which each contained different cider apple varieties. Bittersweet Dabinett and Harry Masters Jersey, plus Bittersharp Stoke Red and Kingston Black were obtained from England.

These cider apples were a joy to press, and very different from our own local apples. Whilst the Fife fruit produced juice that was light, green and tangy sharp, the cider apples produced dark, sweet, and tannic juice. Even the left-over pomace was red!

TASTING NOTES

The intertwining of both the tannic body of the traditional cider apples and the zing and jangliness of the Fife apples creates a rounded pleasant cider with loads of character and bottled pet-nat with a gentle fizz.

Caledonian: High and Dry

Scottish Highlands

ABV. 6.5% | 750ML | VEGAN | GLUTEN FREE

Blend: Single variety of locally grown James Grieve apples wild fermented through the winter in ex whisky casks.

TASTING NOTES

Bottled pet-nat very close to being finished so only a light sparkle. James Grieve is an Edinburgh heritage varietal full of acidity. This one is all about that fantastic jangly acid, similar to a bag of tangfastics, fruity and sharp.

Eve’s: Emerald Necklace

Up State New York

ABV. 8% | 750ML | VEGAN | GLUTEN FREE

The Emerald necklace is the name of the high elevation land encircling the southern ends of New York’s deep, glacially carved lakes with a network of publicly owned land where forest-edge succession dominates the landscape and wild apple seedlings thrive. The apples in this sparkling cider were foraged in the hills and hollows of this place, and allowed to ferment with their own wild yeast.

TASTING NOTES

Tropical fruit, gravelly loam, grapefruit pith. Before the fermentation finished, we bottled it to capture a gentle spritz, pet nat style.

Three Cherries release from Little Pomona, Pilton

+ Once Upon a Tree

The brainchild of Martin Berkeley, Pilton Cider, three producers – Martin, us, and Simon Day, Once Upon A Tree – have secretly been beavering away at this co-fermentation dream. Take some of the nation's best cherries. Share with three different cidermakers, giving them free rein to co-ferment with apples and/or pears.

Little Pomona: Three Cherries
Herefordshire

ABV. 6% | 750ML | VEGAN | GLUTEN FREE

Blend:Trying to capture the essence of the entire fruit, Little Pomona placed whole cherries into a stainless-steel tank to undergo carbonic maceration. Later they pressed the cherries with similar amount of perry pears, fermenting the juice spontaneously in barrel before bottling it as a pet nat.

TASTING NOTES

Flavours are of all the fruit, everything from the stalk to the stone, like a sessionable eau de vie. It's vibrant red so you think it's all cherry, but the perry pears are there lending tannins, some unfermentable sugars and a fleshy, creaminess to the drink.

 Pilton: Three Cherries

Somerset

ABV. 5% | 750ML | VEGAN | GLUTEN FREE

Blend:This complex fruit cider combines a barrel-fermented cherry and crushed lime co-ferment with new season keeved cider.

Black cherries were fermented on their skins, with a handful of crushed limes in July 2021 and aged in a neutral oak barrel for seven months.

TASTING NOTES

Fresh lime aroma on the nose joins rich cherry on the palate. Natural sweetness and soft tannins are layered in from Somerset bittersweet apples for a confident cider finish.

Once Upon a Tree: Three Cherries

Herefordshire

ABV. 6.5% | 750ML | VEGAN | GLUTEN FREE

Blend: We undertook a carbonic maceration of the cherries with a long co-fermentation and maceration with our Dabinett Cider, before pressing and maturation.

TASTING NOTES

The cider has a deep copper appearance with a gentle fizz, and soft underlying sweetness. The aromas have cherry with herbal, tobacco tin notes. Palate opens to more ripe cherry and almond, and soft tannins to the finish. Pair with game or try it with a Bakewell tart!
