    Like us, many whisky fans adore whiskies that have been matured in ex-sherry casks. We also love sherry!

    We sourced our Pedro Ximénenz (PX) from Bodegas de Baron a progressive producer with 480 years of experience, and our cask partner for whisky from the Port of Leith Distillery. Grown in South West Spain, the name PX is derived from the white grapes from which this wine is made. After picking, the ripe fruit is laid out to dry in the sun. The water evaporates and the grapes ‘raisin’; concentrating the sugars inside. The grapes are pressed and the resulting syrupy juice, grape must is fermented before maturation in a solera. This is one of the world’s sweetest wines with 210 g/l of sugar.

    Tasting notes: It has incredibly rich flavours of raisins, figs and prunes, with deep, beguiling aromas of coffee and chocolate on the nose.
