Pet-nat, dry, single variety Dabinett
Townsend Farm is a family farm; they grow a variety of dessert and cider apples in the heart of Herefordshire. In 2017 they started to experiment with making juice to produce single varietal juice rather than a blended product. The next step on the journey as they transition to explore fermenting juices to learn about their work with the trees and the juice, how early or late harvest and low or high hanging fruit impact the juice.
All fruit used in this SV Dabinett came from the ‘Big meadow’, an orchard right in front of Jamie’s cidery where they press, bottle and box all their juices and ciders. They picked apples late in the season and also let them sit in trailers for a long time before pressing. Angry juice, fermented out very calmly.

On the palate – Tannins and acidity in equal measure, stewed apple

Chickpea stew, harissa cous cous, the embarassment of falling over and hurting yourself but telling everyone "I'm fine".
