Dookit Brewing and The Gannet are proud to unveil Myko, a unique Kölsch-style beer brewed with foraged chanterelle mushrooms. This exciting collaborative brew will launch at The Ben Nevis Bar in Finnieston, Glasgow on Friday, 10 October 2025, from 6pm onwards-with free samples available on a first come, first served basis.
Born from a shared passion for wild ingredients and boundary-pushing flavour, Myko is the product of a creative partnership between Dookit Brewing head brewer Harry Douglas Weskin and Peter McKenna, chef and co-owner of The Gannet. The idea took root during conversations over their mutual love of chanterelles- an ingredient McKenna personally foraged from Scottish woodlands.
“After using chanterelles successfully in an IPA last year, I knew I wanted to return to them,” said Harry. “When Peter and I started talking beer, we quickly found ourselves geeking out over mushrooms and flavour profiles. From there, the Kölsch idea came naturally.”

The result is a refined, food-friendly beer that bridges fine dining and craft brewing. It’s a drink made for curious palates, and one that speaks to the richness of Scotland’s natural
“The chanterelles bring a fragrant fruitiness that bolsters the Kölsch’s ester profile beautifully,” adds the brewer. “It’s not a mushroom beer-it’s a beer that happens to be enhanced by mushrooms.”
