This apple and grape co-ferment from the 2019 harvest is made from holistically-grown fruit, a collaboration with Iapetus / Shelburne Vineyards. It’s a blend of Itasca and Louise Swenson cold climate white wine hybrids and the Gravenstein, St. Edmunds Russet, Rubinette, Binet Rouge, Cherry Cox heirloom apple varieties from Eden Orchards, on the East side of the Green Mountains in the Acadian Orogeny.
