Single variety of locally grown James Grieve apples wild fermented through the winter in ex whisky casks. Bottled pet-nat very close to being finished so only a light sparkle. James Grieve is an Edinburgh heritage varietal full of acidity. This one is all about that fantastic jangly acid, similar to a bag of tangfastics, fruity and sharp. 6.5% abv
